My StoryI was born and raised in Córdoba, Argentina, in a loud, busy household with six siblings.
Growing up, empanadas were more than just food — they were a solution. Almost every
Sunday, instead of setting a big table and dealing with piles of dishes, we’d buy
empanadas from the same small place we loved, El Sótano. That’s all they sold. No
menu. Just empanadas done right.
As I got older and went to college, empanadas stayed with me. Near my university there
were casual spots where you could walk in, listen to live music, share empanadas, and
sip a glass of wine. Simple, social, and comforting — food that brought people together
without trying too hard.
In 2022, while looking for a way to supplement my income, a my dear friend Dustin told me about
Mother Road Market and its ghost kitchen concept. That led me to discover Kitchen 66,
a nonprofit program that supports new food entrepreneurs. After applying, I was invited
to interview — which meant cooking and presenting my food. I brought caramelized
onion and blue cheese empanadas. They fell in love with them and awarded me a
scholarship.
I graduated from the program, but life had other plans for a while. In 2024, I made the
decision to fully bet on myself and become self-employed. That’s when this project truly
came back to life.
Today, every empanada I make is inspired by where I come from — simple ingredients,
bold flavor, and food meant to be shared. This is my way of bringing a piece of Córdoba
to the table.

What Makes La Docta Empanadas SpecialAt La Docta Empanadas, nothing is rushed and there are no shortcuts. With years of experience in restaurant kitchens, I bring the same attention to detail to every empanada — from slow-cooking meats to hand-shredding fillings and making everything from scratch.
Each empanada starts with high-quality ingredients. Whole turkeys and chickens are slow-cooked to perfection, vegetables are fresh, and organic ingredients are used whenever possible. Making empanadas is a careful, multi-day process. They are assembled by hand and frozen at just the right moment to lock in moisture and preserve flavor.
These empanadas cannot be compared to tacos or fast, assembled food. Each one is a complete dish, crafted with care and tradition. It’s our way of bringing a piece of Córdoba to your table.

Hand crafted from scratch using premium, carefully sourced ingredients
Each empanada made with the same precision and intention you'd expect from a boutique kitchen.
